Crispy whole Bhetki in sweet n sour vegetable sauce

A mouth-watering continental dish for fish lovers from Ms. S. Mukerji.
Ingredients:
● Bhetki fish 2kg
● Oil for frying ½ Cup
● Flour ½ Cup
● Garlic 5 to 6 cloves
● Bell peppers of 3 colours
● Cashew nuts 50g
● Cooked rice 1 bowl

For the marinate:
● Soya sauce 2 tbsp
● Salt to taste

For the sauce:
● Soya sauce 1 tbsp
● Honey 1 cup
● Tomato sauce 1 tbsp
● Cornflour 1 tbsp
● Sugar a pinch
● Vinegar 2 tsp

Method:
Clean the fish thoroughly, remove the insides, and make three slashes on either side of its body. Marinate the fish with a pinch of salt and a splash of soya sauce for 30 minutes. Heat the oil in a large wok. Coat the fish evenly with flour, then fry it until golden brown. If the fish is too large to fry whole, cut it into two halves, fry each piece until well-cooked on both sides, and then reassemble them on the serving dish. Slice green, red, and yellow bell peppers along with onions into thick pieces. Cut the broccoli into florets and the cucumbers into thick, slanted slices. Heat 2 tablespoons of oil in a pan, add chopped garlic and red chillies, and sauté until the garlic releases its aroma. Add the prepared vegetables and stir-fry. Gradually add the sauce, mixing it with the vegetables until it thickens slightly. Arrange the fried fish on a platter and generously pour the vegetable sauce over it. Surround the fish with a thin layer of rice to create a decorative border. Garnish with sprigs of spring onion and serve hot. Enjoy this beautifully presented and flavourful dish!
