Tomato Aamsotto Chutney

We bring to you a mouth-watering, sweet & sour recipe from our member, Ms D. Deb.

Ingredients:
● Finely chopped tomato 500g
● Mango pulp candy 300g
(Aamsotto)
● Pitted dates 40g
● Raisin 40g
● Dried red chilli 1pc
● Mustard oil 1tbsp
Panch phoron 1/2tsp
● Turmeric 1/4tsp
● Mustard seeds 1/2tsp
● Sugar 400g
● Lime juice 1tbsp
● Salt to taste


Method:
1. Chop the tomatoes and aamsotto in 3 cm chunks.
2. Split the dates lengthwise.
3. Heat mustard oil in a pan and add dried red chilli and panch phoron.
4. Add the tomatoes along with the salt and turmeric.
5. Cover the pan and cook till they have softened. Stir and cook for 2 more minutes till the tomatoes are soft and mushy.
6. Now, add the sugar and stir till the colour of the chutney becomes a deep red.
7. Once the colour changes, stir in the raisin, dates and aamsotto. Boil for another 2 minutes or till the chutney reaches the desired consistency.
8. Add lime juice and serve.
